A cow’s milk cheese and mozzarella variety our handmade burrata has a thin casing and a soft creamy centre (Stracciatella), which is made from fresh cream and fine strands of mozzarella. It has a mild creamy flavour which lends itself to being perfectly paired with any combination of ingredients.
Burrata can be served simply with some fresh crusty bread and a drizzle of extra virgin olive oil, or you can try one of the recipes below.
“This dish is a bit of a throwback to eating ‘aussie’ versions of italian food. The sort of food where people would just throw a handful of Masterfoods “Italian Herbs” into some red sauce and call it a day. This dish is by no means authentic, which is highlighted by the fact that I throw a huge spoon of miso into the caponata just before the end. You can make this dish ahead of time, it reheats well and the flavours develop a bit better if they’ve had a day or two to combine in the fridge." – Chef Hugh
