Stracciatella is a specialty cheese originally from Puglia. A cow’s milk cheese and mozzarella variety, Stracciatella is a soft and creamy cheese, which is made using fresh cream and hand stretched fine strands of mozzarella.
Stracciatella is the creamy inside filling of Burrata and Burratina and can be used in similar ways. A versatile cheese, stracciatella can be served as part of an antipasto, stirred through pasta, eaten on a bruschetta or simply used as a dip.
