Are you happy to kiss those Winter blues goodbye? It’s September. Flowers are blossoming, the grass is green as can be, and that gorgeous sun is shining. We just LOVE Spring! Get ready for a fresh broad bean pesto recipe mounted atop crunchy sourdough crostini. We elevate the snack with a great waste hack using our Fresh Ricotta. And we’re excited to let you know our Find Us map tool on the website has just been updated so you can find your favourite cheese near you.

We sure do love our greens. And in Spring, it doesn’t get any better than sweet broad beans and peas, eaten raw straight from the pod! In this recipe, we marry the freshness of these legumes with mastro, mint and lemon. Before finishing with some gorgeous crumbly baked ricotta. Time to pour a glass of crisp white wine.

Have you ever found yourself looking at the expiry date on your ricotta, not knowing what to do with it? At Vannella we pride ourselves on making fresh cheese without additives or preservatives. This means it tastes better and has more nutrition, although it does warrant a shorter shelf life when it comes to the softer cheese compared to supermarket or deli bought products where preservatives are used commonly, along with ultra high temperature (UHT) pasteurised milk. In today’s recipe we show you how to bake ricotta into a deliciously crumbly cheese, helping extend that shelf life.
