Queso Fundido with Chorizo

Hosting friends and need a guaranteed crowd-pleaser? Bring this Queso Fundido straight to the table, still warm and bubbling. With its molten Oaxaca and rich chorizo flavour, it’s the kind of appetiser that has everyone gathered around the pan. It's a fuss-free appetiser that comes together quickly and disappears even faster.  This simple dish is the perfect go-to for a relaxed, shared dining experience with plenty of cheese pull moments. A comforting classic inspired by its rich Mexican roots.

Ingredients

Serves 4 as an appetizer

  • 100g Chorizo (casing removed)
  • 230g Oaxaca (diced and left to strain for 5 minutes)
  • 170g Totopos (I used Blue Corn totopos) or
  • 4 Plain Flour Tortillas
  • Tomato Salsa to serve

Method

  1. Place a small frypan onto the stove at medium heat. Add the Chorizo and allow to cook, stir frequently to cook evenly and to prevent the meat from sticking to the bottom.
  2. Once cooked, set aside a small amount of the Chorizo for garnish and while the pan is still on the heat add the Oaxaca over the top, covering the Chorizo that is still in the pan. 
  3. Allow to cook for 10-12 minutes over medium heat or until the cheese is melted and bubbling (Do not cover the pan as the excess water in the cheese will not evaporate and you will have a watery dish)
  4. Remove the pan from the heat and place onto a heat proof surface. Enjoy straight from the pan, still warm with salsa and plenty of Totopos or tortillas.
